Scallops Marquis

Grand Mariner seared scallops surrounding a tart and crisp Cucumber-Lime salsa. The redness holding it all together is a slightly thickened Marquis sauce, and the lot is garnished with lightly grilled lime wedges.

Scallops are purchased very fresh and seared rare.
